A Post Memorial Day Quickie!


Grilled Flank Steak and Orange Cauliflower with Roasted Potatoes

I hope you had a lovely Memorial Day and were able to spend it with those you love. Mine was spent with my family with a nice walk on the beach, a mid-day nap, and an afternoon coffee, simply wonderful are the simple things!

Anyway, feeling a bit tired this day and wanted to keep it quick and effortless, but of course tasty. I found some flank steak in the freezer and some orange cauliflower in the fridge and thought why don’t I just fire up the grill. So very easy, not really a recipe to note, I simply seasoned my steak prior to putting on the grill, I like salt, pepper and smoked paprika. With the cauliflower, I first cut it up into bunches and drizzled olive oil and garlic salt all over and placed it directly on the grill for about 7 minutes, until lightly browned. I then put the cauliflower and about 1.5 tablespoons of butter and wrapped it all together in foil and placed it on the grill for another 7 minutes. With the potatoes, I simply cut them up into 1/2 inch cubes,  placed them on a cookie sheet where I drizzled olive oil, salt, pepper and thyme, mixed them all together, then bake at 450 for about 25 minutes.

Voila, around 25 minutes later, cut up the steak, unwrapped my cauliflower, took the potatoes out of the oven and sat my sorry tired bum down for a lovely meal. Not quite a Chopped challenge, but very tasty and very easy. Thank you for reading and hope you have a great new day!
