Pesto Pasta with Shrimp

So this is another pesto dish added to my blog, and probably won’t be my last. I cannot get enough of the garlic, basil, parmesan cheese, olive oil and pine nutty taste that I just want to spread on everything. ITS SOOOO GOOD! And it’s so easy and goes great with just about everything you can throw at it. Tonight’s combination of shrimp and asparagus was yet another stellar choice. The textures of the shrimp and firm asparagus provided a lovely balance of pasta, pesto paste and crunch. The recipe is good below, but as I like to say, cook to your taste! If you like it more salty, add more cheese, more punch, add more basil and pepper. Taste as you go. This is yet another EJlicious dinner which is quick, pretty healthy and very tasty, give it a try. Directions

Pulse 3 cups fresh basil, 2 tablespoons toasted pine nuts and 1 garlic clove in a food processor. Pulse in 1/2 cup plain Greek yogurt and 2 tablespoons each grated Parmesan and olive oil until smooth. Cook 12 ounces bucatini; reserve 1/2 cup cooking water. Toss the pasta with the pesto, 1 pound steamed chopped asparagus, 8 ounces sauteed shrimp and the reserved cooking water. Top with toasted breadcrumbs.
