Barbecue Chicken and Pepperoni Pizza!

Happy St. Patricks Day! All right, so I’m not cooking corned beef or drinking green beer, I suppose I’m not the traditionalist. But I’m not Irish, so I don’t feel so bad, but I discovered something better than green beer, 2 ingredient Pizza Dough! Easy for anyone to make and so quick! Your two ingredients are yogurt and self rising flour, that’s it and that’s Amore!

For the Barbecue Chicken pizza, I had some shredded chicken breast that I sautéed in pan with your favorite barbecue sauce and red onion. I then spread some of the barbecue sauce directly on the pizza dough, followed by mozzarella cheese, and then the chicken and onion mixture on top, placed in oven at 450 for 8-10 minutes. Ejlicious.

For the Pepperoni pizza, I spread some marinara sauce directly on the pizza dough, followed by mozzarella cheese, and then the pepperoni, placed in oven at 450 for 8-10 minutes. Ejlicious.

Recipe for Two-Ingredient Pizza Dough

Ingredients

  • 2 cups self-rising flour, plus more for dusting
  • 1 cup full fat-greek yogurt

Directions

Put the flour and yogurt in a large bowl and mix with a fork until a shaggy dough forms. (The dough may appear dry and crumbly at first, but it will come together as you mix it.) Turn the mixture out onto a lightly floured work surface and knead until the dough is smooth and slightly elastic, about 8 minutes, dusting with more flour if necessary. If the dough feels too dry, add water, a tablespoon at a time and continue kneading until it is soft and pliable. Divide the dough in half, roll into balls and then use a rolling pin to roll out into two 10-inch pizzas. Dust the back of another inverted baking sheet or pizza peel with more flour, semolina or coarse cornmeal and place a circle of dough on top.

Cook until the crust is golden and the cheese is bubbling, 8 to 10 minutes. Using a large spatula, transfer the pizza to a cutting board and let sit 5 minutes. Repeat with the remaining dough round.

The pizza dough was easy and so much better tasting than a store bought instant variety. I hope you enjoy the idea and the pictures of my tasty meal. Have a great weekend!
