Happy National Pizza Day!

Is it legal to post pictures like this? I’m sorry if you haven’t eaten because I’m kind of getting all hot and bothered, my camera lens is all steamed up. This is a sight for extremely hungry eyes. I might have to blow this up into a 10′ x 10″ wall paper sticker in my living room. So you can see how I spent my Pizza Day, it was like Valentines Day came early, my true love! Can you ever get sick of it, hot, cold, fresh, old, I’ll take it any way I can get it.

Well tonight, after my Chicken Arugula Pesto from last night, I decided to keep the pesto party going and make an Arugula Pesto Roasted Tomato pizza. As you can see, to keep everybody happy I also made the ever popular Pepperoni, like your first kiss it never gets old. Not to shock the purist, but I did not make my own crusts, it’s Boboli crust which can be purchased in the market. It taste great and I wanted to spend more time enjoying and watching the Winter Olympics! This is not an official endorsement for Becks Beer, it’s pretty good and it was on sale. If you can handle the heat I’ve included a few close ups and a recipe for the pesto if you like. My National Pizza Day was EJlicious and hope yours was too! Enjoy.

Pepperoni Pizza, how I love thee..

Pesto Recipe

Ingredients

  • Kosher salt
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons extra-virgin olive oil
  • 3 cups baby arugula
  • 1/2 cup firmly packed fresh parsley
  • 2 tablespoons almonds or hazelnuts, toasted
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons of water

Puree the arugula, parsley, nuts, lemon juice, 3 tablespoons water, the cheese and tablespoon olive oil, and salt to taste in a food processor.
