Prosciutto and Smoked Gruyere stuffed Chicken Breasts
After a day of gorging on Superbowl snacks, I thought I’d cook something lite, well sort of. So maybe I could have done without the salty luxurious meat known as Prosciutto or the rich Smokey Gruyere cheese, but how could I, would you? At least I made a simple rice pilaf and a bed of Kale sauteed in olive oil and garlic. Kale is good for me, right? Hope your Monday ended with a smile on your face. Enjoy!
