I usually have a two-week menu all written out in advance, but tonight I realized I had cooked everything I had planned, leaving tonight with a big? And this is where cooking really takes off, what’s in the fridge, old leftovers, veggies, protein, anything I can pull together, of course! It’s your taste buds, cook to your pleasure and of course what you have available. So tonight, I found boneless chicken breasts, great! I have some potatoes, love the spud! Hey, there’s a bit of broccolini, behind the 1/2 gallon of milk! Oh, and those fresh lemons and rosemary that I picked from the backyard yesterday. BAM, as Emeril would say, how about Broiled chicken breast marinated in olive oil, lemon, rosemary and garlic with sautéed broccolini and skillet golden potatoes, sounds like a menu item.
Maybe my palate isn’t so gourmet and sophisticated, but for me, simplicity rules! I included a beauty shot of my potatoes, because they were so lovely. Enjoy!
